Black Bean Quesadillas 🌮🫘🧀

 


A crispy, cheesy quesadilla filled with black beans, cheese, and spices!

Ingredients:

  • 1 can (15 oz) black beans, drained & mashed
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large tortillas
  • 1 tablespoon butter or oil
  • Salsa & sour cream for serving

Instructions:

  1. Prepare the Filling:

    • Mix mashed beans with cumin, garlic powder, chili powder, and salt.
  2. Assemble the Quesadillas:

    • Spread bean mixture over half of each tortilla.
    • Sprinkle with cheese and fold in half.
  3. Cook & Serve:

    • Heat butter in a skillet, cook each quesadilla for 2-3 minutes per side until crispy.
    • Slice and serve with salsa or sour cream!
