Ingredients:
2 slices whole grain bread 🍞
1/2 cup fresh spinach or arugula 🥬
1/4 cup sliced beets (cooked or pickled) 🥒
1/4 cup sliced carrots 🥕
1/4 cup cucumber slices 🥒
1/4 cup chickpeas or your preferred legume (optional) 🧆
1/4 avocado, sliced 🥑
2 tablespoons hummus or avocado spread 🥑
Salt and pepper to taste 🧂
Instructions:
Prepare the veggies: Slice the beets, carrots, and cucumber. If using, rinse the chickpeas.
Toast the bread (optional): Lightly toast the whole grain bread for extra crunch.
Assemble the sandwich: Spread a thin layer of hummus or mashed avocado on each slice of bread.
