Vegetable Fried Rice
A quick and delicious stir-fried rice dish packed with veggies, soy sauce, and scrambled eggs!
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1 tablespoon oil (sesame or vegetable)
- ½ cup diced carrots
- ½ cup peas
- ½ cup bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil (optional)
- ½ teaspoon black pepper
Instructions:
Sauté the Vegetables:
- Heat oil in a pan, add onions, garlic, carrots, and bell pepper. Cook for 3 minutes.
Scramble the Eggs:
- Push veggies to the side, pour in beaten eggs, and scramble.
Fry the Rice:
- Add rice, peas, soy sauce, and black pepper. Stir-fry for 5 minutes.
- Drizzle with sesame oil and serve!
