BBQ Pulled Pork Sandwiches

Ingredients

For the Pulled Pork:
  • 3-4 lbs pork shoulder (or pork butt)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 cup chicken broth (or water)
  • 1 cup BBQ sauce (plus more for serving)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
For the Sandwiches:
  • 6-8 brioche or hamburger buns
  • 1 cup coleslaw (optional but recommended)
  • Extra BBQ sauce for topping
  • Pickles (optional)

Instructions

1. Prepare the Pork

  1. In a small bowl, mix salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.
  2. Rub the pork shoulder with olive oil, then evenly coat it with the spice mixture.

2. Cook the Pork

  • Slow Cooker Method:

    1. Place the pork in the slow cooker and pour in chicken broth, apple cider vinegar, Worcestershire sauce, and BBQ sauce.
    2. Cover and cook on low for 8-10 hours or high for 4-5 hours, until the meat is tender and easily shreds with a fork.
  • Oven Method:

    1. Preheat oven to 300°F (150°C).
    2. Place pork in a roasting pan with chicken broth, apple cider vinegar, Worcestershire sauce, and BBQ sauce.
    3. Cover with foil and roast for 4-5 hours, basting occasionally.
  • Instant Pot Method:

    1. Cut pork into large chunks.
    2. Add to the Instant Pot with the liquids and cook on High Pressure for 60-70 minutes.
    3. Allow natural release for 15 minutes before shredding.

3. Shred and Sauce the Pork

  1. Remove the cooked pork and shred it using two forks.
  2. Mix in extra BBQ sauce and let it sit for a few minutes to soak up the flavors.

4. Assemble the Sandwiches

  1. Toast the buns lightly for extra texture.
  2. Pile shredded BBQ pork onto the bottom bun.
  3. Top with coleslaw and pickles if desired.
  4. Drizzle with more BBQ sauce and cover with the top bun.

Serving Suggestions:

  • Serve with potato chips, fries, or a side of baked beans.
